The Harvest Ballet

A highly anticipated moment of the year, the harvest is carried out exclusively by hand, in keeping with the purest Champagne tradition. Each bunch is carefully picked to preserve its integrity and ensure optimal juice quality.

Spread across 169 villages, including 17 Grands Crus and 31 Premiers Crus, our winegrowers deliver to the House’s presses grapes sourced from exceptional terroirs. This manual harvest, a true moment of sharing and transmission, is the first step in ensuring the finesse and elegance of Collet champagnes.

The Alchemy
of Terroirs

True to its exacting standards, Maison Collet vinifies each cru and each grape variety separately in order to preserve their individual identity. Technical precision is expressed through exceptional facilities: temperature-controlled stainless-steel vats, small-capacity tanks ranging from 20 to 100 hectoliters to isolate high-potential crus, as well as nearly 100 Champagne oak barrels to add complexity and texture.

Only the first pressing is retained, guaranteeing purity and aromatic finesse. Throughout the process, tastings and analyses follow one another to ensure total control, from vine to base wine.

The Perfume
Organ

Thanks to the richness and diversity of its crus, Maison Collet benefits each year from a true “perfume organ,” reflecting all the nuances of the Champagne terroir.

Each wine, aged in stainless-steel tanks or oak barrels, expresses itself as a precious note, contributing to the House’s signature blends, defined by balance, elegance, and power.

The Symphony
of Crus

At Collet, blending is a true act of creation, reinvented with every harvest. The diversity of our crus, like a “perfume organ,” offers infinite possibilities for imagining exceptional cuvées. Nothing is ever fixed. Each year begins anew, guided by attentive listening to what nature reveals.

A delicate balance of precision and creativity, blending involves nearly 60 trials conducted by our Cellar Master and his team, in search of perfect harmony between freshness, structure and aromatic complexity.

In the cellar, time enhances our terroirs. The House maintains a precious collection of more than ten reserve vintages, aged in tanks or oak barrels. True treasures, these exceptional wines enrich each blend, bringing depth, complexity, and consistency, like rare spices in a refined creation.

Mastery

Time is an essential ingredient in the creation of our cuvées. In our chalk cellars, carved beneath the hillsides of Aÿ, listed as a UNESCO World Heritage site, our wines rest quietly on their lees for 3 to 10 years, depending on the desired complexity. This extended ageing imparts incomparable elegance and depth, the hallmark of the Collet style.
